When you think of hybrids, a few things may come time mind. You may think of hybrid-cars with makers like Tesla (one of the best examples – smart, good looking and fast) or hybrid dogs like the ever popular golden-doodle (a mix between a golden retriever and a poodle which is in essence a smart dog that doesn’t shed). Do you think of burgers? Well after today you might.
This week’s look at Legacy’s West’s Food Hall brings us to Knife Burger where chef John Tesar is re-inventing the burger..well, the whole concept of fast food and high end-dining actually. He’s creating a hybrid where fine-dining burgers are served in a quick, affordable food stall. Mmmm okay, you have our attention, John.
His other fine-dining restaurant is a popular steakhouse, Knife in Dallas and the ambiance quite a bit more five star than casual dining. Yet, what he has created is pretty interesting on the other side of the spectrum when it comes to decor but not so much when it comes to taste. It’s a small food stall with a steam-lined ordering process. He’s installed ordering kiosks with touch screen panels where you create your own order. The menu is small but mighty and from what we hear the flavor is incredible!
Where it is: Level one, at the Windrose Avenue entrance
What to try: Well, you know. John Tesar told Burger Business last year that his stall — his first KB outpost in the country —will offer five burgers, two types of fries and shakes. (Tesar plans to open three more locations of Knife Burger, including one in a planned food hall at Fort Worth’s Crockett Row at West 7th.)
Why it’ll be good: Expect the famous Ozersky burger (a popular item at Tesar’s Dallas steakhouse Knife), named for the late food writer Josh Ozersky, which pays homage to all that is good and simple in a very good cheeseburger: Great meat from Cameron’s 44 Farms, gooey cheese and don’t forget the house-made pickles. Knife’s cult-favorite avocado fries are also rumored to be on the menu.
Who Is Chef John Tesar?
This blog has talked a lot about what Chef Tesar has done, but we haven’t mentioned anything about who he is. Let us rectify that immediately!

Three-time James Beard “Best Southwest Chef” semifinalist and Top Chef season 10 contestant John Tesar is known for his stylish, modern American cuisine prepared with classic European techniques, innovative culinary perspective and no-nonsense personality. Throughout his 20+ years in the restaurant industry, which started in La Varenne Ecole de Cuisine in Paris, he has received national nods from Esquire (named for Best New Restaurants for two consecutive years), FOOD & WINE and The New York Times, has made appearances on The Today Show and The Early Show and won the inaugural season of Food Network’s Extreme Chef. Chef Tesar worked in Westhampton, New York and Las Vegas before putting down roots in Dallas in 2007 where he has consulted for the menus at DRG Concepts’ Dallas Chop House and most recently Oak in the Design District, to name a few. Knife at The Highland Dallas is Tesar’s vision of what a contemporary steakhouse should be. Opened in 2014, the chef-driven restaurant has continued to be recognized for reinventing the steakhouse experience. Most recently Knife’s pimento cheeseburger was featured as Best Burger in Dallas on The 50 Greatest Burgers list for Texas Magazine and Best Steakhouse by D Magazine’s “Best of Big D’s” list. Always looking ahead for the next project, Tesar announced he is working with Flatiron Books and Macmillan on a book,Knife: Modern Steak and All American Meats, that will be published in spring 2017.
