It’s BBQ we’re smelling this week as we explore Legacy Hall! Carlton Provisions BBQ is nestled in the Box Garden on the third floor of the hall along with 5 bars! You’ve got a tiki bar, Stillhouse Lounge, Unlawful Assembly Outpost, and 2 rotating pop-ups plus a Hawaiian shaved ice stand – because why, not – right!?
Carlton Provisions BBQ is a new concept from a team that includes a highly rated Dallas catering company teamed up with a restaurant industry veteran.
The players are Vestals Catering, a 10-year-old catering company founded by Jordan Swim, and Larry Lavine, the famed founder of Chili’s.
Carlton Provisions believes in starting with premium products from prime grade brisket, artisanal pork, an all-natural range roaming turkey & chicken. Their meats are smoked over wood-fired pits and the side dishes from pablano corn, brisket stuffed jalapenos & 17-hour beans are made in-house. They are non too shy and will talk all day long about their award-winning desserts form banana pudding to triple chocolate cookies are baked in-house.
They believe in using the best ingredients to make the best bbq and if they’re doing it in Texans know their barbeque and posers are not invited to the picnic if you know what we McCoys mean. It does seem, however, the Carlton Provisions are the real deal!
Grab your fork, grab your knife and get your napkin ready, it’s time to talk food!
The menu includes prime brisket; prime pastrami; five-hour ribs; sausage from Elgin, Texas; and turkey that they’ll brine and smoke. There are two sauces, including one that’s vinegar-based.
Sides consist of bacon-wrapped stuffed jalapenos, hand-cut french fries, apple-fennel cole slaw, poblano creamed corn, and slow-cooked beans.
Desserts goers can indulge in a trio of puddings — banana, coconut, and chocolate — plus cookies, seasonal cobblers, and pies.
More than anything though- this menu is about good ol’ barbeque and the flavors and tastes that compliment them. Check it out here:
Once these diners sat down after eating, they probably couldn’t wait to write these reviews, however, we’re pretty certain there was a nap in between the two because good food can do that to a person.
